The Cuvée does not seek excess. It seeks permanence. Ripe fruit, pastry, nuts and citrus appear clearly, yet no element stands above the wine.

Minimum ageing is 36 months, followed by at least six months of rest after disgorgement. The current lot exceeds 50 months. This wait creates a broad mousse, an almost crisp sensation and a finish that remains elegant and fresh.

In the glass

Fine, persistent bead. Pastry, nuts, ripe fruit and citrus. Generous mousse, unctuous and almost crisp. Complex, balanced, fresh and very persistent.

How to serve

Serve at 10 to 12 °C in a generous tulip glass. Remove from the cold a few minutes before service. Open with control, pour small amounts and follow its aromatic development through the meal.
