White vinification of Baga

Baga Bairrada Reserva Brut Nature

Baga shows another face. Vinified as white, it keeps the energy of the grape and turns it into a dry, structured sparkling wine rooted in Bairrada.

Borlido · Baga Bairrada

The grape that gives time its structure

Baga is a red grape. Here, skin contact is kept low to create a white base wine. What remains is its structure, firm acidity and a vinous presence made for the table.

Minimum ageing is 18 months, followed by at least six months after disgorgement. The current lot exceeds 30 months. Time brings ripe fruit closer to brioche and nuts without smoothing away the identity of the grape.

The right moment

Sunday lunch, a full meal, or a table where sparkling wine needs enough body for oven-roasted dishes, fried food and regional cooking.

01

In the glass

Pale straw colour, subtle golden highlights and a very fine bead. Ripe pear, quince, preserved fruit, brioche, biscuit and nuts. Dry, fresh and creamy, with a long citrus and lightly saline finish.

02

How to serve

Serve at 9 to 11 °C in a tulip glass. The wine gains expression as it warms slightly. It can remain at the table throughout the meal, from starters to main courses.

03

At the table

  • Roast suckling pig
  • Battered salt cod
  • Roast poultry
  • Creamy cheeses
